Pinwheels aux Epignards, Spécialité Nord-Américaine! / Spinach Pinwheels, North American Specialty!



Ingrédients

-225 gr de farine blanche

-1 c à thé de poudre à pâte ou levure chimique

-Un peu de sel

-55 gr de beurre froid, en petit morceaux

-Environ 150ml du lait tiède

-La moutarde non-sucrée

-100 gr de la viande hachée

-Quelques feuilles des épignards bébés

-100 gr de fromage gruyère râpé 

-Quelques olives noirs dénoyautées

-Un peu d’huile d’olive

-un peu de poivre

-Un peu de cumin

-Un peu de coriandre hachée

-2 gousses d’ail écrasées

Préparation

Dans un grand bol ou Kassriya, mettre la farine, levure, sel puis y ajouter le beurre et mélanger le tout à la main jusqu’à que le mélange ait une texture de breadcrumbs «miettes de pain ».

Ajouter graduellement du lait pour obtenir une pâte . Pétrir à la machine ou à la main pendant au moins 20 minutes.

Couvrir la pâte et laisser reposer 15 min. 

Faire cuir la viande hachée dans un peu d’huile d’olive, sel, poivre, cumin, un peu d’ail finement hachée et un peu de coriandre hachée. Laisser refroidir.

Rouler la pâte et former un rectangle, étaler un peu de la moutarde, puis ajouter des épignards, viande cuite, olives et fromage.

En commencant par la partie la plus grande, rouler la pâte sur elle-même en formant un Swiss Roll.
Couper les 2 extremités du rouleau de la pâte.
Couvrir avec du papier parchemin ou sulfirisé et mettre au frigo pendant 15 min.

Préchauffer le four 220°C/420F .

Couper le rouleau de pâte en petits cercles, déposer sur une plaque beurrée et cuire pendant 10 à 15 min.

-55 gr cold butter, diced

-About 150ml warm milk

-unsweetned mustard

-100 gr minced meat

-
Some fresh baby spinach leaves

-100 gr gruyere cheese, grated

-Black olives, stoned

-Some olive oil


-Some pepper

-Some ground cumin

-Some minced coriander

-Some minced garlic (2 cloves )

Method:

Into a bowl, put flour, baking powder and salt then rub in the butter until the mixture resembles breadcrumbs then add gradually the milk mixing to form a soft dough.

Knead the dough in a bread machine or with your hands for a at least 20 minutes. 

Cover and allow to rest for 15 min. 

Prepare the meat with some olive oil, salt, pepper, cumin, minced garlic and coriander.
 Allow to cool.

Roll out the dough to form a rectangle, spread mustard evenly over the dough, spinach, meat , olives then cheese.


Starting from the long side, roll up the dough fairly tightly like a Swiss roll. Trim the edges off.

Cover the roll with a baking paper and put in the fridge for 15 min.

Preheat the oven to 220°C/420F.


Cut the roll into even slices, place on a greased baking tin and bake for 10 to 15 min.
