Manhatthan roulade and Happy New Yea-Bonne Année

Mary Berry is one of the UK's best known and one of the most respected cookery writers in the country. I love her recipes because they are simple, clearly illustrated and most importantly, I've never tried one of her recipes and it didn't work well.

This is the second time that I tried Manhattan Roulade, but the thing (this is how I call my camera) won't take a picture because I was out of batteries, so I couldn't post it .  This is not the first time my camera let me down , so I made sure, before starting my cake, that the batteries are fully charged and everything was all right.  Here is the recipe of this lovely cake and hope you like it.  Happy New Year everyone.

Recipe, adapted from Mary Berry's recipes "Dessert"

Important:

For cutting Roulade, it is important to slice roulade cleanly, so that filling is seen at its best.  For perfect results, dip the knife in hot water before slicing.  Wipe blade with kitchen paper after cutting each slice and dip again in waterTwo contrasting colours white and brown mixed together look striking.

Pour couper ce gâteau , il est important que les tranches soient coupées de telle sorte que les 2 couleurs restent bien distinguées (le blanc et le brun ) et pour qu'elles ne se mêlent pas.  Pour couper, il faut tromper  le couteau dans l'eau chaude, essuyer avec du papier (essuie-tout), puis couper une tranche, puis tromper de nouveau le couteau dans l'eau chaude, essuyer de nouveau et couper , ainsi de suite. Le contrast des deux couleurs ensemble, le blanc et le brun , est tout simplement magique.




Ingrédients:

For / Pour Roulade:

-6 eggs, separated /  6 oeufs (séparer le blanc et le jaune)
-215 g caster sugar / 215g de sucre semoule
-45 g cocoa powder plus extra for sifting / 45g de poudre de cacoa plus extra pour saupoudrer
-120 g self-raising flour or you might use plain flour and add some baking powder / 120 g de farine avec levure incorporée  mais vous pouvez la remplacer avec farine naturel + un peu de levure chimique.

Préparation:

1-Grease 2 Swiss roll tins, line tins with non-stick baking parchment. / Sulfiriser 2 plaques de roulades, beurrer-les d'abord pour faire coller facilement le papier cuisson.

2-With electric mixer, beat egg whites for about 2 minutes, gradually sprinkle in 70 g sugar, beagting until whites stand in stiff peaks.  / Avec le batteur électrique, battre le blanc d'oeufs pour 2 minutes, ajouter graduellement 70g de sucre, continuer à battre jusqu'à obtention d'une meringue.
3-Preheat the oven to 190°. / Préchauffer le four à 190°.

4-In another bowl, using electric mixer, beat egg yolks and remaining sugar until very thick. / Dans un autre bol, à  l'aide d'un mixeur électrique, battre le jaune d'oeufs et le reste du sucre jusqu'à obtention d'un mélange un peu épais.
5-Add flour and 45 g of cocoa, beat with the electric mixer until well mixed. / Ajouter la farine et la poudre de cacoa et continuer à battre avec le mixeur jusqu'à que tous les ingrédents soient bien mélangés

6-With rubber spatula, gently fold beaten whites into egg yolk but one third at a time. / A l'aide d'1 spatule, ajouter le blanc en 3 portions sur le jaune, mais délicatement pour ne pas briser le blanc. NE PAS VERSER LE BLANC D'UN SEUL COUP.
7-Spoon mixture into tins, spreading evenly / Verser d'une façon égale sur les 2 plaques de roulade. La quantité doit être égale sur les 2 plaques.
8- Bake for 8 to 10 minutes (for me, it was 8). / Cuire pendant 8 ou 10 minutes. (pour moi, c'était 8).

9-Sift cocoa over 2 clean tea towels and when cakes are done, immediately turn cakes out on to towels. Carefully peel baking parchment off cakes.  Cut off crisp edges. Roll cakes with towels. / Saupoudrer 2 torchons propres avec la poudre de cacoa , placer délicatement les gateaux sur les torchons, enlever le papier, couper les bords, rouler chacune avec le torchon.
10-After 5 minutes, unroll the cooled cakes, remove the the towels, roll them again and place on wire racks to cool. / Après 5 minutes, dérouler les gâteaux roulés cuits, enlever les torchons, et déposer-les sur une grille. Laisser refroidir.

11-Unroll 1 roulade, spread with about 1/3 of the butter cream.  / Dérouler une roulade, étaler environ le 1/3 de la crème au beurre chocolatée.

12-Roll without a towel / Rouler la roulade de nouveau mais sans torchon cette fois-ci.

13-Unroll second roulade, spread with another third of butter cream.  Join the 2 roulades and roll together / Dérouler la 2eme roulade et étaler un peu de crème au beurre aussi même procédure qu'avec la 1ere roulade (1/3 de crème) puis placer la 1ere roulade au-dessus et rouler délicatement les 2 roulades ensemble.


14-Spread remaining butter cream over roulade.  Decorate with white and dark chocolate.  Refrigerate if not serving immediately .Here is how I made these stars and hearts chocolate, very easy to make / Etaler le reste de la crème sur l'ensemble du gâteaux roulé et décorer avec du chocolat blanc et noir. Réfrigérer si ce n'est servi tout de suite. Voir ce lien comment j'ai confectionné ces étoiles et coeurs en chocolat.

This looks wonderful. I was watching a Christmas edition of Iron Chef America and, can you believe it, they couldn't make a proper rolled cake. It all fell apart. Happy New Year and nice to see you back after a little Christmas break!

I've never heard of Manhattan Roulade before but it looks ideal for New Year. I have recently bought Mary Berry's Baking Bible and it is my first book by her. I've only used the Victoria Sponge recipe so far for a birthday cake but I like her straightforward style. Happy New Year!

I love roulade, am a devoted admirer of them and of those who make them. Yours looks sensational. I am tempted to make one but am nervous to try it as I'm always afraid it will crack and be a disaster. But your pictures are so good....someday I will try a roulade!
