شرمولة مطيشة/Sharmoola Mattisha/Moroccan-Style Tomato Sauce/ Sauce Tomates à la Marocaine


Fish and sea food are always served with this sauce called sharmoola or charmoula matticha , pronounced as "SHAR-MOO-LA /  MA-TI-SHA".  It is kind of one basic sauce that goes with almost any type of dishes: from traditional Moroccan food to grilled chicken, steaks, seafood, pasta, rice, couscous, meatballs, eggs, fish, etc... It can also be served as a dip-appetizer, with chips or some nice bread.  When it comes to create or try a new sauce, it is not that easy, since the sauce that goes with pasta or rice or couscous etc... represents almost 80% of the dish, and I think once you have found the perfect sauce, then you have created a fantastic meal.

For this sauce recipe, you may add all vegetables you like, or meatballs, mergez (sausages), seafood, chicken etc...Once you start experimenting with this basic sauce, the possibilities are endless and nothing can stop you. You will create your own basic sauce that goes with anything, and you will find it fantastic, and want to eat time and time again. However, if you don't like too much spices or you find the taste too strong, you may omit a few of them, it's up to you what to use to substitute them. It is all down to personal taste as to what you put in your basic sauce. By varying a few ingredients, you can serve a nice meal, flavoured with a Moroccan-inspired blend of spices and herbs, transforming the common into the exotic!

When served with Spaghetti Meatballs, this sauce will make a nice change from the traditional Italian way, combining Moroccan spices with the Italian pasta, and creating a delicious flavour! If you like rich and rosé sauce, add at the end some cream and blue cheese, stir and serve immediately. So delicious!

Ingredients:


Yield 5 servings / Pour 5 personnes

-2 tablespoon olive oil / 2 c à soupe d'huile d'olive

-1 medium onion, finely chopped / 1 oignon moyen, finement haché

-3 garlic cloves, finely chopped / 3 gousses d'ail finement hachées

-10 to 12 fresh ripe tomatoes, peeled / 10 à 12 tomates fraîches mûres, pelées


-1 teaspoon sweet red paprika (Tahmira or Ta7mira) / 1 c à thé ou café de paprika rouge ou piment doux ou Tahmira ou Ta7mira comme on l'appelle au Maroc

-Pinch khar9oum L'baldi or turmeric / Une pincée de L'khar9oum L'baldi ou curcuma

-1/4 teaspoon ground black pepper / 1/4 c à thé ou café de poivre noir moulu

-1 teaspoon fresh parsley leaves, finely chopped / 1 c à thé ou café de feuilles fraîches de persil, hachées finement

-1 teaspoon fresh coriander leaves, finely chopped /1 c à thé ou café de feuilles fraîches de coriandre, hachées finement

-Some salt to taste / Un peu de sel selon le goût

-1/4 teaspoon ground cumin / 1/4 c à thé ou café de cumin moulu

-Pinch of soudaniya ghobra or hot red paprika or use red chilli powder or Tunisian Harissa. For spicy food lovers / 1/4 c à thé ou café de soudaniya ghobra ou utilisez chilli rouge en poudre ou bien Harissa tunisienne. A ajouter seulement si vous aimez le piquant.

-1 teaspoon tomato puree or tomato paste / 1 c à  à thé ou café concentré de tomates ou pâte de tomate

N.B.

1-If you are using this basic sauce with seafood, fish or chicken, add a pinch of ground ginger, 1 tablespoon of fresh lemon or lime juice and 1 bay leaf (called in Morocco Warkat (War9at) Sidna Moussa. / Si vous avez l'intention d'ajouter le poulet ou les fruits de mer à la sauce, incorporer une pincée de gingembre moulu, 1 c à soupe de jus de citron frais ou jus de lime frais et 1 feuille de laurier, qu'on appelle au Maroc Warkat (War9at) Sidna Moussa.

2-If you want to add meatballs or chicken, add them with onion and garlic, then follow the recipe and cook the sauce until the meat is well cooked. / Si vous ajouter le poulet ou les boulettes de viande à la sauce, les faire sauter avec l'oignon et l'ail au début. Puis laisser cuire la sauce un peu plus longtemps jusqu'à que la viande soit bien cuite.

3-If you want to add seafood, add them towards the end of cooking (once the sauce becomes dry), then allow to cook for a few minutes, usualy it takes between 5 to 10 minutes. Then add coriander and parsley. / Pour les fruits de mer, ajouter-les seulement vers la fin de la cuisson, puis laisser cuire entre 5 à 10 minutes, puis ajouter coriandre et persil et bien mélanger le tout.

4-If you want to make a sweet sauce that goes with lamb meatball, add a little bit of honey, some fresh mint leaves chopped and some ground cinnamon but remove all the ingredients that you think they won't suit the sweet flavour. i.e soudaniya, cumin etc..../ Si vous voulez ajouter une touche sucrée à cette sauce pour la servir avec des boulettes de viande d'agneau, ajouter un soupçon de miel, quelques feuilles de la menthe fraîches hachées, un peu de cannelle moulu et enlever tous les ingrédients qui ne se marient pas bien avec un plat sucré-salé ex. soudaniya, cumin etc....

How to prepare Moroccan-Style Tomato Sauce / Preparation de la Sauce Tomates à la Marocaine:

1-De-seed the tomatoes and place the seeds into a sieve over a bowl. / Epépiner les tomates et tamiser les graines au-dessus d'un bol.


2. Reserve the sieved juice and discard the seeds. / Réservez le jus tamisé et jeter les graines.

3. Purée the tomatoes in a blender. / Réduire les tomates en purée à l'aide d'un mixer ou un robot culinaire.

4.Put olive oil in a deep skillet or a sauce pot, and turn heat to medium. One minute later, add onion, garlic and salt then saute, stirring for about 1 minute. / Sur un feu moyen, dans une casserole ou une poêle profonde ou autre récipient similaire, verser l'huile d'olive puis laisser chauffer environ 1 minute et ajouter l'ail, l'oignon et sel et faire sauter environ 1 minute.

5-Add tomatoes, tomato paste, all spices and the tomato juice. Stir and bring to a boil. Reduce the heat and allow to cook. Do not cover and stir occasionally./ Ajouter les tomates, concentré de tomate, toutes les épices et le jus de tomate reservé. Remuer de temps en temps et une fois à ébullition, réduire le feu et laisser la sauce cuire sans couvrir.


6- Continue to cook, stirring frequently until the mixture is nearly dry, this will take about 20 to 25 minutes. Add coriander and parsley and remove from heat./ Conitnuer la cuisson en remuant constamment, et jusqu'à réduction du liquide. Ceci pourrait prendre entre 20 et 25 minutes de cuisson. Ajouter persil et coriandre, bien remuer et retirer du feu.

8-Your sauce is ready to serve! / Votre sauce est prête!

For Cheesy Moroccan-Style Tomato Sauce / Pour une version de Sauce Tomates au fromage

All you need / Dont vous aurez besoin:

-About 80 gr grated cheese / Environ 80 gr de fromage râpé


-Cooked Moroccan-Style Tomato Sauce (See recipe above ) / Sauce Tomates à la Marocaine cuite (Voir la recette ci-dessus)

Method / Preparation:

1-When the tomato sauce is ready, add some cheese, followed by pasta or rice water, then stir continuously until the cheese is thoroughly melted. / Lorsque la sauce de tomate est cuite, ajouter le fromage et l'eau de cuisson, puis remuer jusqu'à que le fromage soit bienfondu.

N.B. When the pasta or rice are cooked, drain and reserve about three (3) tablespoons of the rice or pasta water to dilute the sauce. / Au moment d'égoutter les pâtes or le riz, réserver environ trois (3) c à soupe d'eau de cuisson pour diluer la sauce.

2-Serve immediately and sprinkle over some freshly ground black pepper. Enjoy! /  Servir aussitôt et saupoudrer d'un peu de poivre noir fraîchement moulu. Bssa7a w Ra7a!

Un pur régal! J'adore la sauce tomate faite avec des tomates fraîches. Malheureusement, je ne peux le faire que quand elles sont de saison...
