الرُّوزْ بْمَطيشة/Rouz Matticha / Moroccan Style Cooked Rice with Tomato Sauce / Riz Cuit dans une Sauce Tomates à la Marocaine!


"Rouz Maticha", phonetically, pronounced as :  /ruːz mætiːsha/ (ROOZ MATISHA), which means "Rice and Tomato" in Moroccan language, is one of my favourite dishes from my mother when I was young.  In Morocco, rice is traditionally served with a tomato sauce, especially for supper meals.
Since my family and I like spicy taste, I always use the same sauce tomate with Rice, with Pasta and Lasagna as well.  A tasty-spicy tomato sauce, perfect flavour and I seriously crave this sauce all the time. It's so good.  Once you try it, you may begin adding it to anything and everything that you eat!

For 3 to 4 servings / Pour 3 à 4 personnes

Ingredients:

-300 gr de riz basmati / 300 gr de riz basmati

-About 600 gr or 450 ml of boiling water.  The proportions are generally two to one: 100 gr of rice to 200 gr of water.  You may sometimes need to add more water, it depends on the type of basmati you choose for this recipe. / Environ 450 ml de l'eau bouillante.  Les mesures généralement sont 2 mesures d'eau pour 1 mesure de riz : 100 gr de riz pour 200 gr d'eau, mais parfois il faut ajouter plus d'eau, ceci dépend du riz basmati choisi.

N.B. I reduced the amount of liquid in this recipe since I used about 150 ml of tomato sauce. / La quantité  d'eau est réduite dans cette recette, puisque le restant de liquide a été remplacé par la sauce tomate, environ 150 ml. 

-200 gr beef, cut into small bite-sized cubes / 200 gr de la viande de boeuf, coupée en petits cubes

-1/2 beef stock cube, grated  / 1/2 cube de bouillon de boeuf, râpé

-1/2 medium onion, finely chopped / 1/2 oignon moyen, finement haché

-1 garlic clove, finely chopped / 1 gousse d'ail finement hachée

-Some salt to taste / Un peu de sel selon le goût

-Pinch of ground black pepper / Une pincée de poivre noir moulu

-1/2 teaspoon fresh parsley leaves, finely chopped / 1/2 c à thé ou café de feuilles fraîches de persil, hachées finement

-1/2 teaspoon fresh coriander leaves, finely chopped /1/2 c à thé ou café de feuilles fraîches de coriandre, hachées finement

Method / Préparation:

1-Sauté beef, onion, garlic with salt until beef is brown.  Then add tomato sauce./ Faire sauter la viande avec l'oignon, l'ail et sel jusqu'à que la viande soit dorée.  Puis ajouter sauce de tomate.

2-Wash the rice: Pour it into a bowl full of cold water and rub it well with the hands, then wait a few minutes for the water to turn into a milky color, then pour out the water. Repeat this several times until the water in the rice remains clear./ Nettoyer le riz : remplir un bol d'eau froide et placer le riz dedans.  Rincez longuement le riz sous l'eau froide en le frottant entre vos mains. Laisser reposer jusqu'à que l'eau change de couleur.  Une fois que l'eau prenne une couleur blanche et crémeuse, jeter-le.  Répéter cette opération jusqu'à que l'eau devient bien claire.

3-Add beef stock cube and black pepper to the tomato sauce, and stir well.  Add water and once it is boiling, add rice. Immediately, reduce the heat to low, and allow rice to simmer./ Ajouter le bouillon de boeuf  et le poivre noir à la sauce de tomate, puis bien mélanger le tout.  Ajouter l'eau et dès qu'il commence à bouillir, verser le riz. Immédiatement, réduire à feu doux, puis laisser cuire.

4-Stir the rice while cooking about each two (2) minutes. When the meat and rice are tender and cooked through and the sauce has reduced slightly, add coriander and parsley and stir gently. Serve immediately. Enjoy! / Remuer le riz toutes les deux (2) minutes.  Lorsque la viande et le riz sont cuits, et la sauce est à point et légèrement réduite, ajouter persil et coriandre. Délicatemnt remuer le tout, retirer du feu et  servir aussitôt.  Bssa7a W Ra7a!
