تْفَايَا/Tfaya Recipe or Caramelized Onions and Raisins / Recette de Tfaya ou les Oignons Caramélisés et raisins secs à la marocaine



Tfaya, is a very popular Moroccan sauce, made with caramelized onions and raisins and which accompanies the famous Moroccan dish  Couscous or Sakssou, and which is prepared usually for special events. Traditionally in Morocco, three (3) days before a Marriage Ceremony, this dish is prepared for the close family members, relatives and friends of the soon-to-be groom and bride.  The ceremony is called "Henna Day" = Nhar l'Hanna, often a Friday, when it is usual for Henna Day, to take place.

No doubt Tfaya is a delectable topping of sweet and spicy caramelized onions and raisins, which pairs beautifully with  Couscous.  This dish is served with a sauce, made either with chicken or lamb, and the whole is cooked slow with exotic spices as Ras El Hanout and pure saffron, producing a meat that literally falls off the bone and tastes divine!   Couscous Tfaya dish is served by arranging the meat in the center of  Couscous and you top with the caramelized onions and raisins.  Then you generously ladle the sauce in which the meat is cooked, all around the Couscous, and finally, you decorate with some fried almonds. The combination of all these ingredients gives this dish a unique flavour!  However, in Morocco, this dish could be served in three (3) different ways or even more:

1-Some prefer to serve Tfaya Couscous, decorated with toasted almonds and hard-boiled eggs, and this is very common in some cities as Rabat, Fes, Meknes etc...

2-Then, there is the West of the Kingdom, where the same dish is served with Tfaya, meat and chickpeas which are cooked in the meat sauce.

3-In some regions, this dish is served with vegetables and meat, then decorated with Tfaya.

Tfaya veut dire la sauce composée d'oignons caramélisés et raisins secs servie comme garniture d'un grand classique de la cuisine Marocaine connu sous le nom de "Kaskssou ou Couscous Tfaya", un plat bien populaire durant certaines occasions spéciales ex. Le jour de L'hanna.  La tradition veut que ce plat sucré/salé décoré de Tfaya et amandes soit servi à la belle-famille, signe de bon présage pour la vie future des mariés.

Couscous Tfaya est un plat qui représente un goût si exceptionnel surtout pour ceux et celles qui aiment le sucré/salé.  Il se compose d'une sauce de viande cuite séparément et on accompagne souvent Tfaya d'une viande au choix, soit du poulet ou de l'agneau car les deux (2) sortes de viandes se marient bien avec le goût sucré de Tfaya.  Ce goût légèrement sucré de Tfaya, additionné à l'agneau ou le poulet a quelque chose de magique!

Ce plat est présenté en dressant les graines de Couscous sur un grand plat de service, puis on dispose  par-dessus les morceaux de la viante et après vient Tfaya pour garnir le plat.  Enfin tout est parsemé d'amandes grillées.  Il faut bien noter que cette façon de présenter ce plat peut varier d'une région à l'autre au Maroc (Voir version anglaise de cet article ci-haut).

You may add any sort of dried fruits to Tfaya as dried apricots and raisins etc...
 Vous pouvez ajouter toutes sortes de fruits secs au tfaya comme abricots et raisins secs et autres.

Abadaz with tfaya

Ingredients:

-500 gr steamed Couscous / 500 gr de Couscous cuit a la vapeur

-About 1 kg onions,thinly sliced (Bassla Mchanfa) / Environ 1 kg d'oignons coupés en lamelles (Bassla Mchanfa)

-About 100 gr of raisins, soaked in cold water mixed with 1 or 2 drops of orange blossom water for about 30 minutes, then drained / Environ 100 gr de raisins secs trempés au préalable dans l'eau froide avec 1 ou 2 gouttes d'eau de fleur d'oranger pendant environ 30 minutes.  Puis les égoutter.

-1/2 tablespoon butter / 1/2 c à soupe de beurre

-1 tablespoon olive oil / 1 c à soupe d'huile d'olive

-2 tablespoons brown sugar or caster sugar (Sanida) or honey / 2 c à soupe de sucre brun, ou sucre semoule (Sanida) ou du miel

-1/4 teaspoon ground white pepper/ 1/4 c à thé ou café de poivre blanc moulu

-1/2 teaspoon ground cinnamon / 1/2 c à thé ou café de cannelle moulue

-1 cinnamon stick / 1 bâton de cannelle

-Pinch of ground ginger / Une pincée de gingembre en poudre

-1/4 teaspoon khar9oum L'baldi or turmeric / 1/4 c à thé ou café de L'khar9oum L'baldi

-Salt to taste / Sel à votre goût

-Some pure saffron threads / Quelques filaments de safran pur

-About 50 ml sauce in which the meat is cooked / Environ 50 ml de sauce de viande

N.B. If you are not preparing  Couscous Tfaya with meat, then use just water / Si vous préparez Tfaya sans viande, ajouter tout simplement de l'eau.

Method / Préparation:

1.For the recipe of Tfaya :  We're just turning the sugar within the onions to caramel by cooking and allowing them to brown deeply. It's easy to do!  The recipe I'm posting today is for a spicy version of carmelized oinions, but you might omit the spices and sugar if you wish./ Ceci est une recette  d'oignons caramélisé à la marocaine.  Il est important de faire cuire l'oignon à feu très DOUX pour avoir des oignons cuits, ayant une belle couleur brune. Vous pouvez retirer les épices et le sucre de cette recette si vous n'aimez pas trop.

2.While the meat and couscous are cooking, mix the sliced onions with butter and oil, add cinnamon stick and salt, then put them in a pan and allow to cook uncovered, over LOW heat for about 30 minutes,  stirring frequently. / Pendant que le couscous et la viande sont entrain de cuire, préparer Tfaya.  Dans une marmite et sur un feu DOUX, mélanger les oignons, sel, beurre et l'huile, puis ajouter le  bâton de cannelle et laisser cuire, sans couvrir, environ 30 minutes en remuant de temps en temps.


3.Add all spices and meat sauce or just water then cover. Continue simmering for about 1 hour over LOW heat, stirring occasionally./ Ajouter toutes les épices et la sauce de la viande ou de l'eau, puis couvrir et laisser cuire environ 1 heure, toujours sur un feu Doux.

N.B. If you are not preparing
 Couscous  Tfaya with meat, then use just water / Si vous préparez Tfaya sans viande, ajouter tout simplement de l'eau.


4.Add honey and raisins, then continue smimmering for about 30 minutes until the onions are very soft and golden brown. Remove from the heat and serve Tfaya with Couscous or Rice . Reheat over low heat the onions prior to serving./ Ajouter le miel et les raisins secs, puis laisser caraméliser pendant environ 30 minutes.  Retirer du feu et servir Tfaya avec Couscous ou du Rice . Réchauffer Tfaya sur un feu doux avant de servir.


5.You might use Tfaya to stuff msemen, meloui, harsha, batbout, or as a topping for a pizza or a pie or you might use them in a soup, or as a tartinade for sandwiches etc....  / Utiliser Tfaya comme farce pour msemen, meloui, harcha, batbout, ou bien comme garniture pour une pizza ou une tarte.  Vous pouvez aussi l'incorporer dans une soupe, ou l'utiliser comme tartinade pour les sandwichs etc...

I love carmelized onions and this looks delicious. I will have to try this along with the wonderful meat dish.
There is really nothing quite like caramelised onions. Whenever we make them at home, we always double the quantity - and all gets eaten.

This looks absolutely delicious. The beautiful sweetness of the onions would be so tasty!

Nothing beats a lovely caramelized onion, in this recipe it looks like heaven. On pourrait le servir en accompagnement avec un paté aussi

This really looks delicious. One of the people who traveled with us through India had her hands painted before the start of the our trip. She still had portions of the design on her hands at the end of the trip. Re: the spelling of kebobs. There are enough variations of the spelling to make the mind reel.
