Stuffed Buttermilk and Argan Oil Harsha / Stuffed Harsha with Black Olives and Cheese/ Harcha au lait de beurre et l'huile d'argane, farcie aux Olives Noires et Fromage!

I already talked about harsha (harsha ) in my last post a few months ago, so I won’t blab again (Here is the Link for my last post about this bread).  I frequently turn to this stuffed harsha when there is no bread to serve with Harira or any type of soups for supper.  This is a classic harsha recipe that lends itself to endless possibility and variation.  I like to use cheese cream with coriander, but you can use any herbs or soft cheese that suit your preference, and you can use either fresh or buttermilk powder.

It really tastes great when warm, a perfect blend of soft and crunchy texture, and I think it is the buttermilk that makes this harsha deliciously moist, giving it loads of flavour. It was soft and crusty with a lovely mild flavour, compared to a nice sourdough-ish taste, segueing into hot metlted cheese and olives mixture, cooked to a perfect melding of flavors. I just have to exercise great self-control to stop at ONE harsha.  I'm submitting this post to Susan's Yeastspottinga blog devoted to yeast bread.  Please check it out!

Yields: 7 Medium-sized harsha / Environ pour 7 harcha de taille moyenne
Preparation Time: 0 h 15 minutes / Temps de préparation: 0 h 15 minutes
Time to let the dough rest: 0 h 30 minutes  / Repos : 0 h 30 minutes
Cook Time:  0 h 24 minutes per one (1) big or medium harsha but if you prepare Mini-harsha , you can cook 4 to 5 at the same time. / Temps de cuisson: 0 h 24 minutes pour cuire une seule harcha de taille moyenne ou une assez grande. Si vous préparez Mini-harcha , vous irez plus vite, et vous pouvez cuire plusieurs (4 à  5) en même temps.

Ingredients for filling / Ingrédients pour la farce:

-200 gr cream cheese / 200 gr fromage à la crème

-150 gr roughly chopped black olives /  150 gr olives noires hachées, grossièrement

-1 teaspoon chopped fresh coriander / 1 c à thé ou à café de coriandre fraîche ciselée

-Pinch of ground cumin / Pincée de cumin poudre

-Pinch of black pepper / Pincée de poivre noir moulu

-Pinch of Soudaniya ghobra or hot red paprika or use red chilli powder or Tunisian Harissa / Une pincée de Soudaniya ghobra ou utilisez red chilli powder ou bien Harissa tunisienne

-1 tablespoon argan oil / 1 c à soupe d'huile d'argane

Mix all the ingredients together and set aside. / Mélanger tous les ingrédients ensemble et réserver.

Ingredients for  the dough / Ingrédients pour la pâte :

-300 gr fine semolina  / 300 gr semoule très fine
Known in Morocco as /Connue au Maroc sous le nom
Smida R9i9a = السّْميدة الرّْقيقة
-100 gr medium semolina  / 100 gr  semoule moyenne

-Some salt to taste / Un peu de sel selon le goût

-30 ml honey / 30 ml de miel

-2 gr yeast / 2 gr de levure boulangère

N.B. : I used instant dry yeast, but you might use fresh or active dry yeast as well.  For all my baking, personally, I prefer using a little block of fresh yeast instead of dry one, but it is hard to find it where I live.  If you go here to a store or a shop and ask for fresh yeast, they will look at you like you were from another planet and 'how dare you ask for fresh yeast!'.  Having given no choice, I just go for instant or active dry yeast and the vendors usually tell you how to use this "thing" on the package.  I often use instant yeast where the package says it doesn't need to be dissolved in water, you simply mix it in with the dry ingredients and knead your dough.  However, if you use other types of yeast, make sure to read the package, you may have to dilute the yeast with some warm water and sometimes sugar as well until it puffs up before using it. / J'ai mis la levure instantanée mais vous pouvez aussi utiliser d'autres types de levure soit fraîche ou sèche active. Personnellement, je préfère utiliser la levrure fraîche, mais il m'est parfois difficile de trouver ce petit trésor de levure fraîche ici, alors je dois me contenter d'utiliser la version sèche.  Que ça soit levure sèche instantanée ou active que vous avez choisi, il faut tout simplement suivre les directives du fabricant.  J'utilise souvent la levure sèche instantanée et d'après les fabricants, ce type de levure ne doit pas être diluée, et elle doit se mélanger directement à la farine, sel, etc..... Par contre, si vous utilisez la levure fraîche ou la levure sèche active, assurez-vous qu'elle soit émiettée dans un peu d'eau tiède (et une pincée de sucre qui aide la levure à bien lever) avant d'être utilisée, et lorsqu'elle est diluée, il est recommandé de la couvrir et la laisser reposer quelques minutes avant de l'incorporer à la farine.  

-30 ml unsalted-melted butter / 30 ml de beurre non-salé et fondu

-30 ml argan oil / 30 ml d'huile d'argane

- 200 ml cold buttermilk / 200 ml de lait de beurre bien froid (babeurre ou lait fermenté)
Known in Morocco as /Connue au Maroc sous le nom
Lban  -Lben = اللّبْنْ 

-100 ml warm water / 100 ml de l'eau tiède


To shape and cook Harsha, you need : / Dont vous aurez besoin, pour confectionner et faire cuire Harcha:

-About 150 gr medium semolina / Environ 150 gr de semoule moyenne


Method / Préparation :

1-Put the the two types of semolina, yeast, honey, oil, butter, and salt in a Kassriya or a  large bowl, then mix well with your hands until just combined and crumbly. This will take 3 to 5 minutes. / Dans une Kassriya ou un grand bol, mettre les deux sortes de semoule, levure, miel, huile, beurre, et sel, puis incorporez le touts jusqu'à obtention d'une texture bien sablée (3 à 5 minutes).

2.Then add buttermilk, water and mix until a very WET and MOIST dough is formed.  The dough 
should be really wet and this is important otherwise, harsha once cooked will dry out and it won't taste as nice as it should be. If the dough is still crumbly, add more buttermilk or water to achieve the moist consistency of Harsha. / Ajouter du lait de beurre et de l'eau et mélanger le tout pour former une pâte qui doit être bien HUMIDE (Si vous ne mettez pas assez de liquide, votre harcha sera dure et sèche comme de la pièrre après cuisson). N'hésitez surtout pas d'ajouter un peu de  lait de beurre ou de l'eau si le mélange reste encore sablé.
3.Cover and let the dough stand for about 30 minutes.  The dough needs that important rest period, not to rise but to allow the dough absorb the excess of the liquid (see picture below)./ Couvrir et laisser reposer environ 30 minutes. Veuillez noter que le but de ce temps de repos, est non pas de laisser lever la pâte mais de donner le temps à la semoule d'absorber plus the liquide possible (voir photo ci-dessous).

As you can see on the picture below,  I let the dough rest for 30 minutes and the flour thoroughly absorbed all the liquid. / Comme vous pouvez voir sur la photo ci-dessous, la pâte a pu absorber tout le liquide après à peine 30 minutes.
4.Shape the dough into equal balls.  How big should they be? This I guess would depend on the final harsha you want to achieve, is it small, medium or big!  Generously dust the working surface with semolina, transfer a dough ball on the working surface, then flatten each portion and fill with 1 tablespoon of the Olive/Cheese filling. Re-shape into a smooth ball, then sprinkle the top with semolina./ Former des boules égales de la pâte dont la taille définera la taille de votre harcha; i.e grande, moyenne ou petite! Saupoudrer généreusement un plan de travail de semoule et commencer à étaler avec vos mains chaque boule, puis déposer au centre une c  à soupe de la farce préparée, et  replier la pâte sur elle-même de telle sorte à couvrir la farce. Saupoudrer généreusement la surface de la pâte de la semoule.



5-Flatten each harsha with your hands into a disc about 0.3 to 0.5 cm thick, dusting generously the top of harsha with semolina. / Aplatir chaque boule de harcha farcie en cercles sur une épaisseur de 0.3 à 0.5 cm environ, en continuant toujours à saupoudrer généreusement la surface de la boule de la semoule.

6.Over high heat, preheat an Oujda pan (Special pans, very popular in Morocco, to cook Harsha) or use a Tagine or simply any heavy non-stick frying pan or a skillet. /A feu vif, faire chauffer une poêle d'Oujda (Au Maroc, il existe des poêles spéciales pour faire cuire Harcha) ou bien utilisez un Tajine ou tout simplement une poêle anti-adhésive assez lourde.

7.You want the pan to be very hot before adding harsha.  Transfer the bread to the hot pan for cooking, then 
immediately reduce the heat to medium-low. It will take about 12 minutes or more to cook each side (Depending of course on the size of your Harsha), which means approximately 24 minutes or more to cook only one (1) Harsha. This bread needs enough time to cook all the way through. Use a large flat spatula to turn it so it doesn't break and use 2 pans to go faster. / Assurez-vous que la poêle est bien chaude avant de commencer la cuisson de harcha.  Transférer-la dans la poêle et faire cuire, réduire immédiatement le feu à moyen-doux, et laisser cuire des 2 côtés.  Il faut calculer environ 12 minutes ou plus (tout dépend de la taille de votre Harcha) pour chaque face, ce qui veut dire approximativement 24 minutes ou plus pour cuire une seule (1) Harcha. Ce pain a besoin de suffisamment de temps pour assurer une cuisson uniforme et profonde.  Pour retourner Harcha, servez vous d'une spatule et soyez délicat(e) pour ne pas la briser.


8.Cook until golden brown on both sides./ Cuire jusqu'à que harcha prenne une belle couleur dorée sur les deux côtés.

9.Serve immediately and enjoy!  / Servir aussitôt et Bssa7a w ra7a!
